Lazy Sunday on a Monday 9th March

We had a bit of a late night at the Uig Hotel with our crofter friend Alan and his friend David so we had a lay in this morning until around 7.00am.
Then it was just toddling about doing morning chores and I made Spurtle Porridge for breaky for us.
Then it was off to Staffin to the store there to pick up some vanilla essence, malt vinegar and corn flour - as I needed them for the Meringue Recipe that our friend Penny had sent me through on WhatsApp. Alan mentioned in passing how they are his favourite so I wanted to surprise him at lunch today.
Vince was busy in the kitchen cooking a beautiful pork roast that we had picked up from the Portree Butcher (Ryan) the other day whilst I tried again to work on uploading photos to Snapfish for a birthday gift I am making.
I worked on the meringues ready to go into the oven when the roast was done, unfortunately I hadn’t figured on the roast veggies still in the oven - so when Vince opened the door my Meringues all collapsed!
Once Alan arrived, I did the mashed potatoes and gravy, and dished out. We had our usual “blether” but after our drinking efforts the past couple of nights we all decided there would be no drams today!
Alan was duly surprised by dessert and cleared his plate. We sent him home with scraps for the chickens, my leftover meat for Darky (his elderly sheepdog), some egg yolks for the dogs and a roast meal and dessert for Alan to have at his home. He was well loaded up when he left.
Vince and I just relaxed by the fire afterwards, he watched some video drone training on his phone whilst I finished off the uploading and design on Snapfish and put the order in for Alan’s 70th birthday surprise. We have let Lorraine (the owner of Willie McLeod’s) in on our secret and she has asked if it’s possible to get extra copies as she would like one for the house as well as for her son who grew up around Alan and his animals. So we have ordered 4, as we would like to take a copy home as well. They are due to arrive by 16th March so I hope they are not late as we leave Skye on 29th March and although Alan’s birthday is not until April, we want to give it to him before we leave. So fingers crossed!
It rained all day today - it’s amazing how the weather can change, we had brief periods of sun yesterday - I took this over Pointy Mountain in the afternoon yesterday.
We just had left overs for dinner as we had a big meal at lunch time and relaxed by the fire.
